They are proud to make their syrup with Sambucus canadensis- American elderberry. Rather than artificial preservatives or large amounts of sugar, they use fresh squeezed organic lemon juice, to add more vitamin C, and to lower the PH of their syrup for shelf stability.
Berries ripen in late summer and into the fall. The dark black skin and fruit on elderberry, (as well as black currant and Aronia) are known to be full of vitamins and antioxidants. These come in the form of vitamin A, B, and especially vitamin C, phenolic acids, flavonoids, and anthocyanins to name a few. Antioxidants are crucial for our bodies to fight free radicals which cause oxidation and imbalance in our cells and can lead to illnesses and disease.
