Orinally the master candy maker would take the sugary confiction, and while it was still warm from the kiln, wrap the candy back and fourth over his thimb to product the iconic shape (this is now done on a specially designed shaper).
Color assortment will vary, and due to the fragile nature of ribbon candy, as hard as we try, you can expect a few pieces at least to be broken.
